Third Course: the Fish Course
Cioppino with Salmon, Penn Cover Mussels, Manila Clams, Prawns, Oregon Dungeness Crab, Pernod & Session Tomato Stock, Rouilli, and a Grilled Crostini paired with SESSION
Fourth Course: the Intermezzo Course
Mascarpone Sorbet with Amber-Poached Honeycrisp Apple (from Siragusa Farms), Quince Chutney, and Italian Pan-Fried Almonds paired with MATHIAS'S MAIN INGREDIENT OATMEAL STOUT
Fifth Course: the Main Course
Herb Marinated and Pan-Seared Lamb Chop with Grapefruit Gremoulata, Fried Pancetta, and Oven-Roasted Parsnip & Pear Puree paired with SESSION BLACK
Sixth Course: the Palate Cleansing Course
Shaved Fennel Salad with Navel Orange, Toasted Hazelnuts, and Herbed Chevre paired with 2012 OLD BOARDHEAD BARLEYWINE
Seventh Course: the Dessert Course
Bourbon Stout Chocolate Eclair with Bourbon Stout Ganache, Vanilla Bean Pastry Cream, a Mocha Truffle, and Raspberry Coulis paired with 2013 BOURBON BARREL AGED IMPERIAL STOUT.
